Cornbread

My aunt, who is from the south, told me we didn't have the right kind of corn meal up here to get real true cornbread, so we may be missing out on "real" cornbread, but I have found an amazing recipe that I (in my non-southern ignorance) really enjoyed. I  aquired this recipe from a Colonial Days celebration at an Elementary school.

Corn Bread
Heat Oven to 350.
Oil (not cooking spray) a 9 X 13 pan- heat in oven
In a bowl add:

  • 3 Cups flour
  • 1 1/2 Cups sugar
  • 1 Cup corn meal
  • 2 T baking powder
  • 1 tsp salt
In a larger bowl add:
  • 6 T butter
  • 2 1/2 Cups evaporated milk (or buttermilk)
  • 2/3 Cup oil
  • 4 eggs
Add dry ingredients and mix until blended. It can be lumpy
Carefully pour into the hot pan and bake for 30 minutes or until golden brown.

Muffins from Pancake Mix

So, it's not really "from scratch" but a friend of mine gave us some blueberry pancake mix.  To be honest, I'm kind of tired of pancakes.  Then I wondered if I could somehow make muffins from the mix.  Turns out you can.

This recipe comes from tasteofhome.com

Muffins from Pancake Mix

2 1/2 C mix
1/2 C sugar (I used less)
1 egg
2/3 C water (we used more like a cup)
1/4 C oil
1 1/2 C blueberries (unless your pancake mix is blueberry)

Mix and bake in muffin tins at 400 for 14-16 mins.

*I thought they turned out a little too pancake like to be good muffins- but we're not complaining.  We also found another recipe to try sometime we have store bought pancake mix laying around.

Pumpkin Chocolate Chip Muffins

15 oz can pumpkin
1 box spice cake
1/2-1 pkg semi-sweet chocolate chips

Mix pumpkin and spice cake in a bowl.  Keep stirring until it is very well mixed.  You know, like until your arm feels like it might fall off.  Then add the chocolate chips (I don't do the whole package) and mix some more.

Place mixture in 12 muffin tins (they only raise a little so fill them mostly full) and bake at 350 until done.  About 20-25 mins.

YUM!

Old Fasion Doughnuts (Sour Cream)

This recipe came from The Messy Baker

  • 2 1/4 cups cake / soft-wheat flour, plus more for rolling and cutting
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon iodized salt
  • 3/4 teaspoons ground nutmeg
  • 1/2 cup sugar
  • 2 tablespoons shortening / vegetable lard, trans-fat-free preferred
  • 2 large egg yolks (I used the whole egg)
  • 2/3 cups sour cream
  • canola oil for frying

Mix it all together well (should be kind of sticky) and refrigerate for 30 mins.  Roll out the dough on a floured surface cut doughnuts and fry in oil at about 325 degrees F. Makes about a dozen or so.
After cooled, glaze doughnuts, wait for it to harden and enjoy.  I made these at night and thought they tasted best the next morning.  They didn't make it to lunch.
Just fried

This has only two bananas per loaf for more bread and less banana.

1 C shortening
1 1/2 C Sugar
4 eggs beaten
3 1/2 C flour
3 tsp Baking powder
1 tsp Baking soda
4 c Mashed Banana (I only use 4 bananas total)

Ice-cream Cones (Bowls)

Homemade Ice-cream deserves a homemade bowl.  They are easy and very yummy.

Whisk together
2 eggs
1/2 cup sugar

Add
1/4 C melted butter
3 Tbsp milk
1/2 tsp Vanilla
1/3 C flour

Batter should be very runny.  If not add more milk

Over medium heat spoon 1/4 cup mixture into a slightly oiled skillet and spread thin by slowly rotating the heated skillet around until it fills the area.

Brown on both sides.  If steam is still rising from it, it is not done.  It should be a golden brown.
Remove and shape promptly.

Cones are fun, but your fingers may get burned while rolling.  If you choose to do
a cone, pinch the bottom and sides to seal it.  I threw a few chocolate chip in the bottom to melt too.  They serve as a extra seal and a yummy surprise.

I prefer bowls, easier and less painful (from burns).  Take your crepe like cone and place it in a bowl.  Push middle down and allow it to cool and harden.

Warning:  If mixture not cooked long enough the cone won't set.  Still makes a great ice-cream topper though.

My Moms Bread

Don't got lecithin or have more time?  Here is my mom's bread recipe for half and half wheat/white bread.  This one tends to be fluffier.

In a bread maker place these ingredients in this order (that's important)

1 2/3 cup water
4 1/4 cups flour
2 tsp salt
1/3 cup brown sugar
3 Tbsp dry milk
2 Tbsp Shortening
1 Tbsp Yeast

Set it on bread dough setting.  Once finished, place in two greased bread pans and rise for 25 minutes.  Bake at 350 for 25-30 minutes.

Baking in the oven instead of the bread mixture makes it fluffier.

Will post pictures when I make it again

Basic Bread Dough

Got an hour?  You can make bread!

5 1/2 cups flour   (I use half wheat)
1/4  cup sugar
1/2 Tbsp Salt
2 Tbsp Instant yeast
2 inch wide circles of liquid lecithin
2 cups really warm water- plus a little extra to the side if the dough is too dry

Mix the dry stuff in a bowl.  Add the liquid.  Mix until it makes dough.  It will be sticky.
Knead for about 5 minutes.

Place in two greased bread pans.  Rise for 25 mins.
Bake  at 350 degrees for 25 mins.

                      BREAD!!!

I have also used the recipe to make hamburger buns and rolls.
